Sweet and Sour Chicken

1 pkg. (2-1/2 lbs.) boneless thighs

10 sprinkles of soy sauce

1 - 4 oz. can unsweetened pineapple juice

3 - 4 cloves of garlic

4 oz. white vinegar

14 oz. bottle tomato catsup.

Marinate 24 hours before baking,Cut up each thigh into 4 peices,Place in bowl, mince fresh garlic and add remaining ingredients to chicken,Cover and place in refrigerator for 24 hours,Take out of bowl and put into baking pan,Place in pre-heated oven at 350 degrees F for 1 hour,When fully cooked, the juice from the pan may be used to pour over rice.

Chicken Thighs Kiev

2 1/2 lbs boneless chicken thighs 

1 – 16oz can Sauerkraut drained 

6-8 slices swiss cheese 

1 1/4 C Thousand Island Dressing

Place chicken in greased baking pan and sprinkle with salt and pepper. Cover chicken with sauerkraut. Pour dressing evenly over sauerkraut and then top with slices of cheese. Cover pan with tin foil and bake at 325 degrees for about 1 hour or until chicken is cooked through.
